I read a bunch of different recipes for this and adapted them to this version. It works surprisingly well as a base for tacos topped with salsa, guacamole and cashew crema. This would also be good on nachos or maybe in enchiladas?
- 1 cup walnut pieces
- 2 Tbsp tomato paste
- 1 clove garlic, chopped
- 1/2 tsp chili powder
- 3/4 tsp cumin
- Salt to taste
- Place all ingredients in a food processor and process until well combined and pieces are evenly sized, being careful not to over process. You don't want to make a paste, you want small pieces, like ground beef.
- Use as is to keep it 100% raw or heat through in a small saucepan and serve warm.
